Original steps

  1. Mix the yeast with a little sugar, then gradually add the warm water and let it sit until activated.
  2. Beat the eggs well, then gradually add the flour until a somewhat firm dough forms.
  3. Add the yeast mixture to the dough along with the lemon juice and a pinch of salt, then mix well.
  4. Roll out the dough on a floured surface to a thickness of 0.5 cm.
  5. Drizzle the melted ghee over the surface until absorbed, then roll or fold it like a pastry and let it rest.
  6. Roll it out a second time, then cut and shape it into triangles.
  7. Fill with either minced meat, Rumi cheese, white cheese with mint, or leave plain.
  8. Roll each triangle into a crescent shape and place on a greased baking sheet, then let rise.
  9. Brush the tops with egg wash or sweetened milk.
  10. Bake in a high-temperature oven until golden brown and cooked through.
