  1. Arrange the toast in a greased Pyrex dish.
  2. Whisk the eggs with the yogurt, sugar, and vanilla thoroughly.
  3. Cook the fresh fruit, such as pears or apples, in a pan with butter, sugar, and a little cinnamon.
  4. Pour half of the mixture over the toast, followed by the cooked fruit.
  5. Add another layer of toast and pour the remaining mixture over the top.
  6. Bake in a medium-heat oven until cooked through.
