Original steps

  1. Melt baladi ghee in a heavy pot. Add onions with a pinch of black pepper, cooking over medium heat until deep golden brown.
  2. Add beef cubes to the caramelized onions, searing on high heat until browned on all sides.
  3. Progressive braising (Shaqshaq): Add boiling water 1/4 cup at a time. Cover and cook over low heat, adding water each time the liquid is absorbed.
  4. When meat is three-quarters cooked, add potato cubes and minced garlic so they cook in the rich onion gravy.
  5. Add salt and allspice. Simmer until sauce is thick and velvety, coating the back of a spoon.
