Original steps
- Separate the egg whites from the yolks.
- Beat the egg whites thoroughly in a mixer after adding 3 teaspoons of water.
- Whisk the yolks well in a bowl, then add them to the beaten whites in the mixer along with the sugar, beating well until the sugar dissolves.
- Mix the flour, cocoa, and baking powder, then gradually add them to the mixture alternating with the milk until all ingredients are incorporated.
- Grease a baking pan with butter and lightly dust with flour, then pour the batter into the pan and bake in a medium-heat oven until done.
- Once baked, leave the cake to cool.
- Cut the cake in half and fill with a portion of the chocolate cream, sprinkling with crushed hazelnuts if desired.
- Place the second half of the cake on top and cover with the remaining cream, then sprinkle the surface with chopped chocolate and coat the sides with crushed hazelnuts.
- You can also garnish by adding swirls of whipped cream with candied cherries.
