Original steps

  1. Mash the peaches, mix with the juice, and cook for 20 minutes until the mixture softens.
  2. Boil the sugar with the water for 5 minutes, then whisk the egg whites and pour them into the hot syrup while stirring constantly, then set aside to cool.
  3. Whip the cream, then add it to the egg and peach mixture and mix well.
  4. Pour the mixture into a deep mold, cover, and place in the freezer until frozen.
  5. When serving, slice into portions and serve with some fresh fruit.
