Original steps

  1. Prepare a wide, high-sided pot and fill it halfway with water; place a steamer sieve over it, sealing the edges with a dough made from flour and water, then place over medium heat until boiling.
  2. Place the couscous in a cheesecloth of appropriate size and fold the edges into the sieve to cover it, then cover with the pot lid and leave over low heat for 20 to 30 minutes.
  3. Carefully remove the cheesecloth from the sieve and spread the couscous in a bowl, using a fork to fluff and separate the grains, then let it rest; sprinkle with 1 cup of cold water or broth and gently loosen the grains by hand.
  4. Return the couscous to the cheesecloth, place it back in the sieve, cover, and cook for a second time for 30 minutes.
  5. Remove from the cheesecloth and place in a bowl over low heat, add the ghee to taste, and stir with a fork while hot.
  6. Serve in a dish and sprinkle with powdered sugar and coconut.
