Original steps
- Peel the dates, remove pits, and process them in a food processor.
- Mix the date paste with about 2 tablespoons of the reserved ghee until smooth.
- Add the salt, fennel, and anise to the flour.
- Make a well in the center of the flour and add the sesame seeds into it.
- Heat the ghee and pour it into the well, then stir well with a wooden spoon until the temperature cools, rub the mixture well by hand, then add the sugar and rub together.
- Dissolve the yeast in a little sugar until liquid, then add a little warm water, then add it to the flour and knead well, gradually adding warm water until the dough becomes somewhat firm.
- Cover the dough and leave it to rise.
- Take pieces of dough one by one, roll them into balls, and make a well in the center to place a piece of date paste inside, then seal the dough and flatten it; repeat until all ingredients are used.
- Arrange the pastries on a baking sheet and leave for a short time to rise, then bake in a medium-heat oven.
