  1. Beat the butter or ghee thoroughly until it turns pale, then gradually add the sugar while continuing to whisk.
  2. Add the eggs one by one, beating well after each addition, then add the vanilla and lemon zest.
  3. Mix the flour with the baking powder and add it gradually, alternating with the milk or yogurt, until the mixture is combined.
  4. Grease a baking pan with ghee and dust it with flour, then pour in the batter and bake in a medium-heat oven until done.
  5. You can color a portion of the batter with cocoa to create a marbled cake.
