Original steps

  1. Rinse fine burghul in warm water, drain completely, and let rest 15 minutes to soften without soaking in excess liquid.
  2. In a large bowl, mix minced meat, burghul, grated onion pulp, garlic, spices, and baking powder. Knead vigorously for 5 minutes until sticky and homogenous.
  3. Shape onto skewers or into fingers, moistening hands with the reserved onion juice to produce a smooth, glossy surface.
  4. Grill over hot coals or bake on a greased tray under the oven broiler, turning until nicely browned on all sides.
  5. Place glowing charcoal on foil in the baking dish, drizzle a drop of ghee, cover immediately for 5 minutes to infuse charcoal aroma.
