Original steps

  1. Peel the fava beans and mash them well with a fork.
  2. Sauté the onion in oil or ghee until golden, then remove and let it cool slightly.
  3. Whisk the eggs and season with salt, pepper, and cumin, then mix in the sautéed onions.
  4. Add the mashed fava beans and parsley to the egg and onion mixture and mix well.
  5. Heat a little oil in a non-stick pan, pour in the mixture, and fry it like an omelet, flipping to cook both sides.
  6. Garnish with parsley.
