Original steps
- Sauté the onion in oil, then add the garlic and chopped tomatoes; add about 1 cup of water with the sugar and let it boil for approximately 5 minutes over medium heat.
- Grease a baking dish with oil and pour in the sautéed onion along with its liquid.
- Cut the potatoes into medium cubes and add them to the sauce in the baking dish along with 2 tablespoons of tomato paste.
- Prepare a light white sauce: In the same first pot, melt the butter and stir in the flour well, then add the spices, celery, and parsley with enough water to reach a medium consistency (it is preferable to keep it thin if the potatoes are being cooked with the fish).
- Place the fish pieces into this white sauce, then pour the mixture over the sauce and potatoes in the baking dish.
- Cover the dish and place it in the oven until cooked through, reserving a little sauce to pour over the fish when serving.
- Serving: Serve with tahini salad or a white seafood sauce.
