  1. After washing thoroughly and picking the leaves, boil in a little boiling water with salt until tender.
  2. After boiling, chop the spinach coarsely.
  3. In a bowl, combine the oil, lemon juice, salt, pepper, and minced garlic; stir the mixture well to thicken it, then toss the spinach thoroughly in the dressing.
