  1. Boil the potatoes in their skins in boiling water with salt and vinegar.
  2. Once cooked, peel them and mash thoroughly with a fork while still hot.
  3. Prepare a pan with a little butter and heat it slightly, then add the potatoes and toss briefly until they are well combined with the butter, then remove from heat.
  4. Season with salt, pepper, and chopped parsley.
